I was given some organic oranges from my neighbour's garden, and found a recipe from one of my old 1970's cookbooks for pork chops baked in a mustard and orange sauce. I served it with brown rice and a green salad that I had made, which is shown in the photo above. Really delicious, and perfect for a winter comfort meal.
Pork Chops in Orange Sauce:
4 pork chops
Salt & Pepper
Grated rind and juice from an orange
1 Tablespoon mustard
Approx 50 to 100 g brown sugar
Brown pork chops then transfer to ovenproof dish. Mix together the grated orange rind and juice, mustard and brown sugar, pour over the chops. Bake at 180C until cooked through and browned. Serve on brown rice, and pour the juice over them. A salad with watercress, makes a great accompaniment.
